Parsley is well known as a culinary herb. In 2023, however, the weed was voted poisonous plant of the year. But why can the plant also be poisonous?

Most herbs used in cooking are considered healthy. Same with parsley – and yet the kitchen herb was voted poisonous plant 2023. Parsley is part of many dishes, so how can the herb be poisonous?

The reason: as soon as the plant develops its flowers, it forms the toxic substance apiol. But not only in the flower itself, other parts of the plant are also poisonous from then on. For example the seeds, stems or leaves. Under no circumstances should you eat parsley during or after flowering. The toxin can cause allergic reactions. At very high doses, kidney and liver damage can occur.
